Factory wheel 17x7.5 - Tire width?

Factory wheel 17" x 7.5" Offset 6 3/4"

What is the widest size tire that will work with this factory wheel without wheel spacers and wont rub against the sway bar?

I'm hoping a 11.5" wide tire will work.

The 11.50" wide tire will work on the wheel no problem. However you may run into rub issues with the added height of the tire.
