Nice! I may go with your method. Do you have any pics? Would love to see them.I made one and it worked well. I used a 1/4in plywood sandwiched with a nice 1/4in black HDPE sheet.
I used these shelf brackets and just flipped them upside down.

If you pull off the plastic cover on the tailgate, there is a set of empty bolt holes that take M6, if i remember correctly and just bolt the hinges in to that, but get long enough ones so they can reach through the plastic cover.

I recall seeing a youtube video on installation of one of the commercial tables. You could look for one of those and see what holes they used. I seem to recall that they used some open slots and put in custom molded plastic inserts to put some screws into.Nice! I may go with your method. Do you have any pics? Would love to see them.
