I have M-186 Dana 30 front and M-220 Dana 35 rear. Going to do fluid swap this weekend. Where is the fastest place to get gaskets other than the dealership? I found a few on Amazon but don't know if they will be a 100% match. I don't live near the dealership. Any ideas or sources for exact fit gaskets? Going with Amsoil 75w-85 front and 75w-90 rear.

You won't need new gaskets. The factory ones are reusable.

Why not just use the drain/fill plugs?

I used LubeLocker ones on my TJ, they are very nice and reusable. I didn't want to wait for RTV to dry and they worked great. They are expensive but well made. Probably gonna get one for my F-150 when it's time to drain/fill that one as well.
