As you tighten it down, it crimps down on the metal around it. They are one time use. May require a tool to properly install it. You'll just need to know what thread you need. Getting the old one out may be nearly impossible.
About this nutsert... I've found something like this, mainly looking at it because it has "jeep" in the name:

Any suggestions on how I determine the correct nut size for what I'm doing...?

I bought several different sizes from my local Fastenal. I just matched them up to the bolts I needed them for. If you have a place like that thatspecializes in nuts, bolts and fasteners in your area you could just carry the bolt with you and explain to them what you're wanting to do. That kit from extreme terrain would work, you just might have a different size bolt for that door catch??
A local body shop might fix it for the price of that kit though. Just a thought.
As for the loose nut in the body... have you looked directly underneath the body of the jeep to see if there's access to it, like a drain? Or pull back the inner fender to see if you can get to it? Never mind, I just looked at mine and couldn't find a way to get in there.

Measuring would work. If that's too much of a bother, go to the hardware store and buy some 6mm bolts/nuts in fine and coarse thread pitch (.75 and 1.0).

Here’s the hole, in the white metal upper left corner of the photo, just to confirm what I’m talking about.

So we don’t think the nutsert / rivnut will damage the door jamb? I don’t mind if it doesn’t look perfect.

In the photo I’m pointing to a bit of plastic that I wonder might give me access to where the nut fell, If I could remove it? But I don’t want to attempt to remove it if there’s a danger of breaking that too. Any idea what the piece is called, how I can look up removal…?
Sorry to necro a thread but this exact thing happened to mine. Did you or anyone ever come up with a way to fix it? Mine's on the front passenger sol the cable that attaches it actually limits it pretty well. I'd love to get it back to normal if possible.

If you pull the kick panel, can you access the area behind it?

haven't tried but i just ordered some rivnuts they seem to be the solution
If it's something you don't remove regularly, a Rivnut will work. If you take the doors off and on a lot, Rivnuts tend to spin and make life miserable. For a frequently used fastener, I'd put a regular nutplate behind it with rivets holding it.

Second that — I added a rivnut, which worked for a little while, and then came off again. So instead I just left it, as I do take the doors off a lot and don’t care much about the door-stop function. (Although I did tear the cloth door keeper thing in a rear door — anyone know what part I need to repair that, how to do it?)
