The damn stuff ok things are wayyyyyyyy too thin for any respectable tire. So I'm wondering if I can run these tires on stock rims and safely go off-roading?

Beadlocks?

Can easily run a 12.5 on a stock 7.5 no problem. Just down air down as far. Usually keep my wife’s around 15psi

Just can't run at Max psi they will were the center if you do, but on a light weight Jeep it's no problem, and drives like a dream.

Putting in some taller springs on one friends Jeep and some exhaust work on another, we all run different width wheels but same tire so thought I’d show a neat comparison
10” wide vs 8” vs 7.5”
Narrower the wheel, the tire will pinch in more making it slightly taller so you will need to run a lower daily psi for even tread wear

If the 10" is on the left, it sure looks taller than the others.

I'm trying to figure out the same question... How low can I go? The pic below is at the full street 36 PSI on my Ironman 35x12.50's, but I'm nervous about how low I can safely drop them. I saw a reply from @stil2low above saying 15 PSI, but since my wheeling involves my entire family of 6 (I have an aftermarket 3rd row seat) in the Jeep, I don't like to push boundaries. Getting stuck would NOT be the business! LOL!

Is 15 PSI conservatively safe? If not, what ballpark should I be in?

I run stock KO2s on stock rims down to 17psi, no issues whatsoever.

15 is a good pressure for a stock width wheel, wheeled lots at that pressure along with many others with no issues of slipping a bead

It’s just the way the tire is leaning, it’s actually about a 1/4-3/8 shorter than my 8” wide

I just got 35 12.5 r17’s on my stock JLU rims. Discount tire inflated to 36 psi and it feels a bit unstable on the highway in my opinion. What is proper air pressure for highway driving?

The problems running wider tires on narrower rims are more of an issue on the street than off road. The biggest issue being uneven tread wear with the middle wearing faster.

You can adjust for this by running lower tire pressure. Do the chalk or white shoe polish test.

One other thing. If a set of wheels costs $1300. And you get 50,000 miles rather than 60,000 miles out of your tires because the wheels are "too" narrow, well you can see that the payback period is longer than the life of the vehicle.
