If you spend a good amount of money for a cargo area enclosed steel system, what would stop a would be thief from breaking in and just push the power lock button to open tailgate?
What are good options?

About 30 seconds after you lock with the remote the interior lock buttons are disabled. Haven’t tested this statement but recall reading it somewhere.

Remove doors, no more lock button (unless there’s another one I’m not aware of).

I have been meaning to test this to confirm, but I believe once you lock the jeep with your fob, the only way to unlock it is with the fob again; meaning that if you hit the "unlock" button inside your front doors, it will only unlock the doors and not the tailgate - to unlock the tailgate you would need the fob.

With a soft top, even if they can't open the tail gate due to the lock system, they can still get in and have time to mess with things or cut into/unbolt stuff. Whether or not a thief will run around with a dremel, grinder, or cutoff wheel I guess depends on how much catalytic converter theft you've got in your area. Regardless, IMO, don't leave anything enticing sitting in a soft top Jeep. A Jeep with a soft top is about as secure as a wet napkin.

If they want your stuff, they have a battery grinder or a tow truck.
I don't keep anything valuable in it. The soft top IS freedom.

Yeah, f you want it, don’t leave it in a soft top Jeep.

My TJ had a soft top - there are easy rules:

1) Don't lock doors - reduces the chance of a slashed top/window
2) Don't leave anything of value unless it's in a Tuffy type console/box

During the summer my JL (and previous TJ) had the top/doors removed full time. There is nothing in that Jeep that anyone would want to steal
