Why go 33's? They will look so small on a 2.5". And then you'll regret going with 33's and buy the tires you should have bought to begin with - 35's. Also, depending on the lift you may need to run wheel spacers for less backspacing so the wheels don't hit the control arms.
My 23 JLURXR with V6 etorque, 315's and 4.56 gears, completely stock, averages right around 18mpg per tank. 10 mile commute to work each way at 50 to 55 mph with a few stop lights along the way. Highway driving at 75mph will knock the average down to 17.3 ish.
Looking at Jeep's build and price it looks like Jeep has dropped Etorque with the V6 and brought back ESS? Is it the same ESS as before? I'd much rather have ESS as it is easy to bypass and less complex than Etorque.

Your wheels are not the source of your problem. Plenty of people in my jeep group run 3.5" backspace. Its almost like a standard backspace for beadlocks. Fix your castor, beef up your steering, and adjust your tire pressure down if need be.
Ran 3.5" backspace and 37s for years. Caster set to 6.2 degrees. RPM tie rod, drag link, track bar and Falcon stabilizer. 80 mph with 2 fingers on the wheel. No issue with ball joints.
