I used one similar on mine when I installed the lift and steering. I set it to somewhere between 0-1/32" toe out and had terrible death wobble. Took it to the shop to have the alignment checked on a machine and it was actually at 1/4" toe in. Set it to 1/16" toe in and it drove perfect ever since.

That threshold is subjective to several factors I would think, so no definite answer on that. But definitely the combination of longer and larger bodies at some point will need an outboard bracket.

I had a similar conversation with AccuTune before/when I ordered my 2.5s. The long story shortened is with a properly setup 2.5 with ~5" of up travel, you'll hardly ever bottom out, negating the need for Air Bumps.
I can verify that with around 20k miles on mine now, and some pretty hard hits...

I will also mention to your point about shock extension, my shocks extend to ~28.5ā and my 37s clear with 2ā of bump stop and stock fenders/liners.
Unpopular opinion, Ride height (lift height) has nothing to do with tire clearance. Tire clearance is controlled by how much bump stop you have added.
Ride Height/Lift Height then controls how much up travel you have which will greatly impact ride quality.
You can likely clear 40s at factory...
