I have owned both and currently drive a Sahara.
Both were JLs.
For the price difference I wouldn't buy a "new" Sahara over a Sport S. I bought this one Certified Pre-owned.
Used doesn't seem to make much difference in price.
Other than color matched fenders I don't see an advantage.

Drive a 2020 Sahara with 33 inch KO2s. Engine is a 2.0 T with eTourque. I typically get 22 for mixed driving. Pulled a 1000 lb fishing boat on vacation and averaged 19. Much better than my 2014 JK.
It gets only marginally better when I use 91 octane gas.
Mine is in the shop to repair corrosion as we speak.
They are repainting all four doors, the hood and tailgate.
But not the rest of it.
They also replaced the hinges.
