I live in Phoenix and have the SOT on my '21 JLUR and drive with it open at least 8 months a year. I also installed the insulation & mesh from Hot Headliners for the summer months, both of which help alot! If you get the option, I'm sure you'll enjoy it!
I had a similar issue in Sep. 2023 on my '21 JLUR and the dealership put on the same stabilizer as in your pic and then retorqued the suspension. The Mopar product is pretty worthless ($30-40 item) as rough road shimmy has already returned. After alot of online research and reading user reviews...
I installed a Hothead Liner in my JLU and it seems to have helped with both roadnoise and heat (I live in Phoenix). Can't compare to hardtop, but the convenience of pushing a button and having the top open is awesome! I use it year round, albeit less when the temp starts pushing 100.
I had the same ESS problem with my '21 2.0L turbo. Starting to see the same symptoms again after 2 years of battery change. How'd the Interstate batteries work for you?

Just ran it last Sunday. No snow and not much water in the creek near the mine. Trail above the wall was somewhat deteriorated but certainly doable. My Jeep has a Mopar lift and 35s. Have a great ride!

Maybe the dealership service department you went to is crap. The dealer I use (Airpark Jeep in Scottsdale)has serviced my JLUR just fine every time. You can transfer you unused oil changes to me anytime! ;)

All I can say is that what you experienced were the same issues as mine and that shifting into 4L while slowly rolling, I've never experienced it again. I suppose they could be entirely different problems tho.
I had this happen once...same issues as you described. I learned from the wonderful ladies with Barlow Jeeps in Sedona that shifting into low 4 with a slow roll (2-3 mph) virtually eliminates the grinding noise. Works everytime for me. Good luck!
