Yeah their lack of instructions is very frustrating. They only provide the following "drawing sheet". They are all loose bolts, nuts and washers that sandwich the skid plate to the existing stock skid plate which stays in place.

I 100% agree, and think FCA dropped the ball by not adding something so trivial to the cluster that is so critical to the health of the emissions system. I highly recommend getting a ScanGauge in the future for some peace of mind on this...
I'm willing to bet this is the result of the emissions regen cycle occurring. Basically smells "hot" after it completes and back in the garage. Totally normal though. Do you have a ScanGauge or anything to monitor the status of the emissions and regens?

This is normal after draining the fuel/water separator the fuel system can lose its prime. The same thing happened when I changed my fuel filter for the first time. The proper procedure is to cycle the push button twice to "ON" about 30 seconds each time. Here is an excerpt from the manual:

Hey Chris, I didn't have that issue when I installed my Arcus bumper about a year ago. Are those mounting ears on the plate square with the bottom? If not, can they be bent a little bit towards the middle of the plate using a big crescent wrench or pliers?
Yup it is that easy - we are lucky as diesel owners 😁 Jeep did not have the right mindset when they designed the fuse distribution to be located over that battery in the other engines. They certainly weren't thinking about "ease of maintenance".
