2,068 miles over two days. I didn't exceed the speed limit by more than 5 mph and never went over 80 mph. Took the route from Utah through Wyoming, Nebraska, Iowa, Illinois, Indiana, Ohio, Pennsylvania, Maryland, and into Virginia. I averaged 20.7 mpg using 87 octane the whole trip.

Sounds like your dash camera is working as designed. If you've decreased the sensitivity on the camera and it's still filling up, you may need to drive slower on the bumpy stretch of road. Not ideal, but the other option is to replace the camera with one that has a wider sensitivity range...
I measure the result with a tire pressure gauge as well as checking my dash readout for the tire pressure (trust but verify). 12 psi every time.
