I would put level on the rock rail or the top of the hardtop. If it’s low in rear you can just ad a coil spacer. Keep in mind if you take the top off it will raise the rear a bit too.

They are serviceable, but I have never had to do it. I ran the Fox 2.5s on my JK for 2-3 years after the rocksports without any issues as well. The version on my JL has the DSC adjusters

I am running the Metalcloak 3.5" with Fox 2.5s and it works really well. I have also run the rocksports on my JK for awhile and they actually perform great for the price. They just look cheap.
Not sure if this matters to you, but that would likely kill the resale value of your jeep. As you can tell, most people don't care for it. To each his own though.....
This is a 72.5" wide axle with a Method 4.75" backspaced wheel. 3.5" backspacing would be really wide and you would lose the advantage of the lower scrub radius that the wide axle gives you.
