They do have dampening adjuster knobs on some reservoirs. The main advantage is holding more oil and having more surface area to displace heat which both keep the shock cool. It also allows for slightly longer travel in the same shock body length.
The springs have a decent ride. I need to take a measurement, as I'm not sure if they have sagged, but the secondary rate is pretty much dead. I have no bumpers, winch, racks etc yet, so I would definitely go with HD if you are adding any weight.

Also, It appears they charged you ($439) for the Fox ATS Adjustable stabilizer but you just got the IFP stabilizer ($150).
Nevertheless, most of your ride quality issues are likely coming from 38x15.5 tires on 20X12 wheels. That is very heavy...
My first question is always: Did you do the wheels and tires at the same time as the lift?
If the tires are E-rated or even D-rated, you might just be feeling those instead of the lift itself. Also, make sure your PSI isn't too high.
If your shock part numbers are correct, those are JK 4"-6"...
Over 2.5", I would highly recommend:
Some sort of front caster correction - Lower control arms or control arm correction brackets.
Adjustable front track bar.

If you're going to assemble your own kit, I would definitely recommend supplementing the parts posted with bump stop extensions (F&R), Track bar bracket or track bar rear, track bar front, rear sway bar links. Also, some sort of caster correction for the front. I don't care for cam washers...

That is the same as the control arms for the Ram Rebel and 1500 Air-Ride. The leveling arms for the air suspension attach to them.
