New here and not sure on rules of introductions. I know some forums like you to treat it like you walked up to a campfire. You wouldn't just start asking questions but would get to know the group a little.

From Jax, Fl. Have a wife and two daughters 3&5 that can't wait to get into a new Jeep and start exploring. They are part of the Eagle watch group here and love to go check on nests in the area. Avid fly fisherman and paddle boarder and hit the Bahamas as often as possible to chase bones and drink Kaliks with my friends.

Think there'd be any rubbing issues with a 20x9 -12 offset with 295/65R20 or 325/60R20 on a stock Rubi. They both measure just north of 35" but the 325's are 13" wide.
Welcome , I’m in Jax too :) I love taking the Jeep on the beach. Y’all will love it.

What did you use to extend the bumpstops and how’s it working so far?
Attached. Just confirm the size. I can check the size when I get home tomorrow. It works great and it matches the black stock bump stop.

Here are my 17” x 8.5” ICON Rebound bronze wheels with 4.5” backspace and -6mm offset. The tires are 35” x 11.5” x 17” Nitto Trail Grapplers Load Range C.

Pretty stiff. 35 psi
I run the same tire on my F350 and love them but figured they might be a little stiff on the Wrangler. Great tire and quite. I hope you like them.

I'm lucky to get 20mpg highway on the stock 33s! I guess another factor that comes into play with MPG is how fast you habitually drive. I've noticed there is a big difference between 60 mph and 75 mph.
That and if you have auto or 6 speed tranny. Ive been averaging 18 city/hwy on a 6 speed and I'm on it 50% of the time

I am wondering what I should air down to when I am on the trail. Suggestions?
As a rule, whatever your MFG states as your baseline air pressure, deflate by 50%

Example: Tire mfg says 30 PSI, I air down to 15

YMMV, but that's usually a safe bet. You CAN go lower, but then you risk losing a bead (unless you run beadlocks and then you can drop it down near flat...)
