Pretty good day. My day to cook. Breakfast was smoked meat from baby back ribs mixed in with hash browns and fried then covered in Jalapeño sweet barbecue sauce.

Then we loaded up and head to Montezuma Castle National Monument. Only a thirty mile or so drive. Plus this is another stamp in the National Parks book. The castle is ancient cliff dwelling.

We ran the shelf road/trail around Woodchute mountain today before returning to our base camp.
These are dash cam screen shots. Yes after looking at the photos I am aware that I need to clean the windshield.

The trail section was approximately 28 miles long with a total drive of approximately 60 miles.

Back at camp I cooked the crew a great dinner. Pork chops with a Texas seasoning and rosemary grilled then covered with a sweet bbq sauce and garlic chilli peppers. The side dish is zucchini, mushrooms and onions grilled in butter and olive oil with seasoning salt, pepper, garlic and chipotle pepper. The crew thought it was amazing. I think they are just trying to get me to cook more often.

Carla and I knocked out a quick two mile walk to finish off the day. Climbed in the camper to escape the wind and finished the last two episodes of season two of The Witcher.


Not sure what they changed in the forum software, but it no longer shows the photos when placed in the post until after posting the response. Making this a little difficult to add descriptions to photos. The struggle is real.

That chain drive isn't something you see every day.

Yes and no. Carla has stayed the same. Gary and Angie are up a little and I am down about 18 pounds. Gary and Angie are up a little maybe 10 pounds each . Their activity level is way lower than Carla and mine. When Bill was with us , he dropped 20 pounds and did a strict keto diet.

Carla and I hike and walk a lot. Plus I run often. I am probably in the best overall shape I have ever been in. I am no where near as strong as I used to be still strong with the ability to run up a mountain side. I started the trip at 265 and just weighed myself a couple days ago at 248. I can actually getting cut up for a almost 55 year old dad.

Mind you we eat very well and cook incredible meals. Maybe I should post up some of the meals we have cooked. We don’t eat hotdogs or a plain burgers at camp.

We typically only eat in restaurants when it is to windy to cook or we want to be waited on.

If so, you may want to look at heading thru the country around Tombstone, Cochise Nat Mon, Bisbee mining town (upscale old western mining town), across to the Coronado Nat Mon, thru the trails from there to Canelo, and up to Sonoita. Everything from desert to mountains all in a day's drive and place camp up in the Parker lake area.

We have been to the Mexico border many times already on this trip. The current plan is to move over by Sedona tomorrow and spend a week there. Jeeping and hiking, then to Flagstaff for Overland Exo West. After Overland Expo to Joshua Tree, Big Bear in California then be in Seattle by June 14th. On June 15th we have an eight day cruise to Alaska booked. After the cruise we head to Alaska with the Jeep.

Food wise, Carla whipped up a breakfast wrap this morning. Eggs, bacon, feta cheese, sun dried tomatoes, spinach and garlic.

We plan to move our base camp from Mingus Mountain by Jerome Arizona to somewhere over between Flagstaff and Sedona with the preference of being closer to Sedona. We will probably get a hotel Wednesday night and chill in a pool and hot tub and recharge before we set out for another two or three weeks of straight camping.

Getting laundry and life maintenance things done for the rest of the day.

Looks great. Cook the bacon tad more and replace that Feta with Sharp!!! ;)

Seeing what you all are doing on a regular basis out of the back of those trailers is making me want to up my game.

Our first trip out in our T@G was a couple of weekends ago. I didn't solely use the T@G's burners for cooking, but having more storage space for more kitchen tools (my wife is complaining that I have too much cast iron) and just having the galley to work in/with made cooking seem a lot easier than it typically was while tent camping out of a car. We had a traditional pancakes, bacon, and eggs breakfast and a Cajun chicken dinner; both of which were actually pretty simple (in ingredients and in preparation). But one of my kids between bites of chicken said it felt weird having a "regular" meal while camping.

I'm really enjoying following your adventures, and appreciate you spending time to make the posts. I'm part jealous and part inspired.

Oh, and you have me spending time online looking at those discadas now as well.

While in Sedona try the Red Rock Valley State Park just a few minutes out of town and hike the Eagles Nest Trail.
